The sauce....dark soy sauce, light soy sauce, oyster sauce, sugar, hua diao wine
Mushrooms, carrots, scallions - cubes
Minced meat marinade with sesame oil and dash of pepper
Fried the omelette, drain excess oil, place on plate.
Heat wok, add in minced garlic, minced meat, carrots, mushrooms...fry till fragrant and add in sauce mixture, thicken with potato starch if wish to....pour mixture over omelette on plate and decor with scallions!
