Many people loves luncheon meat. It can be added to fried rice, poridge, vegetables and sandwiches. My kids love 'em cut into think slices and deep fry till crispy and eat with rice.
Another method is the above ~ luncheon meat omelette.
Cut luncheon meat into slices. Beat the eggs.
When oil is hot, fry luncheon meat slices till a little crisp, then pour in beaten eggs. Fry till cook and serve with rice!
