I love this chicken soup very much and cook quite often though it's rather heaty. So I normally will drink leong sui beforehand.
Easy steps...1st to heat wok then stir fry minced garlic and ginger till fragrant.
Add chicken and continue frying until chicken is half cooked.
Add in jew's ears, stir to mix well.
Add water and cover till chicken is completely cooked.
Add salt and Henessey and off the fire.
My children likes this as well. But my daughter will only eat the chicken meat cos' the soup is too strong for her.
