Amaranth Salted Egg Soup


Anchovies & Garlic Cloves
Frying these in oil will reduce the fishy smell in the soup, but make sure to drain the excess oil before putting in the water. You may want to add ginger cubes as well.


Salted Egg
Break the yolks to smaller pieces before cooking.


Amaranth Leaves
Can be substituted with those of purple leaves.
